The Mushrooms that we grow at Golden Gourmet Mushrooms
Maitake Mushrooms King Trumpet, Oyster Mushrooms White & Brown Beech Mushrooms

Perhaps the easiest way to start using these new varieties of mushrooms is to simply substitute these mushrooms in the same dishes and preparations you have used with the common button mushroom. You will be rewarded with new flavors and with better nutrition and health benefits. Please feel free to develop your own cooking styles and techniques with these mushrooms and frequently sample the mushrooms as you are cooking them and note how the textures, flavors and aromas develop. Also feel free to combine several mushrooms in the same dish for a blend of flavors, textures and aromas.

A very simple and versatile way of using these mushrooms is to lightly sauté them with onions, bell peppers and/or other vegetables along with a sauce of your choice (balsamic, barbecue, or soy-based) and then serve them over your main dinner protein of choice (fish, fowl, beef or pork). Or alternatively, serve over rice or pasta.

Please note that we do not recommend washing or rinsing Golden Gourmet Mushrooms before cooking. Our mushrooms are cultivated on steam-sterilized materials that contain no manure or soils and are hygienically harvested and packaged. In contrast, the common button mushroom and derivatives (ciminis, portobellos) are cultivated on pasteurized materials which contain composted manures and soils.

• A Few Words About Eating Mushrooms Raw:

We recommend that all mushrooms should be cooked before they are eaten. There are several reasons for this recommendation:

  1. The cell walls of mushrooms contain chitin, a form of cellulose.  Humans do not have the ability to digest chitin. Undigested chitin may cause some discomfort to some sensitive people.  The cooking of mushrooms helps to breakdown the chitin and lessen potential problems. Please note that while chitin is not digestible it functions as a human dietary fiber. Dietary fiber is important to human health and digestion. Fungal dietary fiber has been shown to have some unique attributes including including the reduction of cholesterol levels.
  2. The cooking of mushrooms tends to make the nutritive and medicinally-active components much more available for digestion and absorption in humans.
  3. Several species of wild mushrooms (examples: spring verpas, morels, Gyromitra species) are known to be very toxic in the raw, uncooked state.
